These Steamed Carrot and Oatmeal Muffins are perfect for a morning or afternoon snack! Don't forget to share your creation on our Lady Club Facebook Group!


  • 2 cups of oatmeal powder 
  • 1 egg 
  • ¾ cup of sugar  
  • 1 cup of low-fat milk
  • 2 tablespoons of oil  
  • 1 cup of grated carrot  
  • 1 ½ tablespoons of baking powder  
  • Optional: 1 cup dried fruit nut mix 


  1. In a bowl add your egg and sugar, mix well with a wooden spoon  
  2. Slowly add in your milk and oil, continue to mix well  
  3. Add the oatmeal powder, carrot and baking powder, continue mixing  
  4. After it has created a cake batter consistency, pour into muffin/cupcake cups in a baking tray  
  5. Add your optional dried fruit and nut mixture on top 
  6. Steam on high for 18-20 minutes 
  7. Enjoy with a coffee shake on a rainy afternoon!
