These Steamed Carrot and Oatmeal Muffins are perfect for a morning or afternoon snack! Don't forget to share your creation on our Lady Club Facebook Group!
Ingredients
- 2 cups of oatmeal powder
- 1 egg
- ¾ cup of sugar
- 1 cup of low-fat milk
- 2 tablespoons of oil
- 1 cup of grated carrot
- 1 ½ tablespoons of baking powder
- Optional: 1 cup dried fruit nut mix
Method
- In a bowl add your egg and sugar, mix well with a wooden spoon
- Slowly add in your milk and oil, continue to mix well
- Add the oatmeal powder, carrot and baking powder, continue mixing
- After it has created a cake batter consistency, pour into muffin/cupcake cups in a baking tray
- Add your optional dried fruit and nut mixture on top
- Steam on high for 18-20 minutes
- Enjoy with a coffee shake on a rainy afternoon!
