Ingredients
Salad:
- 15 x grape tomatoes
- 100g purple cabbage
- 100g baby spinach
- 2 tablespoons diced Spanish onion
- 1 x large yellow capsicum
- ½ cup cooked and shelled edamame beans
- 30g baby bocconcini
Dressing:
- ¼ cup extra light olive oil
- ¼ cup white vinegar
- 2 teaspoons dijon mustard
- Salt and pepper
Method
- Diced all salad ingredients and layer into a bowl
- Combine dressing ingredients in small container with lid and shake well to combine
- Dress salad and serve!
