Ingredients

  • 500g mince (turkey is a good option)
  • 1 tin cherry tomatoes
  • 2/3 eggs per person
  • Handful of parsley
  • 600mL beef stock
  • 1/4 tsp Garam masala
  • 1 tsp Cumin
  • 1 tbsp Sweet Paprika
  • 2 tbsp Garlic
  • 1/2 tsp Ginger
  • 2-3 tbsp dark soy sauce
  • 1 lemon

Method

  1. Cook the mince until well done.
  2. Add spices and soy sauce. Stir.
  3. Add tinned tomatoes and beef stock.
  4. Simmer for 10 minutes covered.
  5. Crack in eggs. Cook for 3-5 minutes until the whites are just cooked and the yoke is to your liking.
  6. Garnish with parsley and squeeze over lemon juice.
