Trick-or-Treat Pumpkin Cake

  • 2 cups of flour (you can use ground-up oats as oat flour, gluten-free flour or your flour of choice)
  • 2 scoops of The Lady Shake Vanilla (any flavour will work though)
  • ½ cup mashed pumpkin
  • 1 carrot, grated
  • 3 whole eggs
  • 1/3 cup almond milk
  • 1/4 cup yoghurt
  • 1/4 cup sugar-free maple syrup or honey
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • ½ tsp ground ginger
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 cup walnuts, chopped (optional)


  • 1/2 tub light cream cheese
  • 2 tbsp Natvia sweetener
  • ½ tsp vanilla essence


  1. Preheat oven to 180°C
  2. Line a loaf tin with baking paper or grease with oil
  3. In a mixing bowl, add all the dry ingredients and stir until combined
  4. Grate the carrot, mash the pumpkin and mix all of the wet ingredients in a separate bowl
  5. Add the wet ingredients in with the dry and stir well. Pour into the loaf tray
  6. Bake for 40 minutes or until a skewer inserted comes out clean
  7. Whilst the cake is cooling
  8. Whip the cream cheese, Natvia sweetener and vanilla essence and spread over the cake
  9. Cut into 12 slices
