CHILLI CON CARNE

  • 1 large brown onion
  • 500g lean beef mince
  • 1 teaspoon minced garlic
  • 1 teaspoon chilli powder (or chilli flakes)
  • 400g tinned tomatoes (salt reduced)
  • 2 Cups reduced salt vegetable stock
  • 400g red kidney beans
  • 1 tablespoon cumin
  • 1 tablespoon salt reduced tomato paste
  • 1 cup cooked rice
  • 1 avocado
  • Side salad to serve

 

METHOD

  1. heat frypan and spray with oil
  2. when hot add diced onions, garlic, cumin, chilli and mince and cook till brown
  3. When meat brown add tomatoes, tomato paste, vegetable stock and kidney beans (rinsed) and mix
  4. cook for another 5 minutes then serve with cooked rice (1 man handful each)
  5. smash avocado with fork and serve on top ADAMS TIP: add a side salad of lettuce, cherry tomatoes, avocado, cucumber, red onion
